Cake with Walnuts

  • 2 1/3 cup all purpose flour
  • ѕcup sugar
  • 2 cups - crushed walnuts
  • 20 uncrushed half walnuts for decoration
  • 6 Tbsp.butter
  • 3 eggs separated
  • One packet of baking powder
  • 1 lemon ( peel grated)
  • Salt
  • A little bit of butter and flour for the baking pan

For the cream (optional):

  • 1/2 cup soften butter
  • 1/2 cup sugar
  • 1 yolk
  • 1 cup of strong coffee

Serves: 12-15; Preparation Time: 60 minutes; Cooking Time: 35 minutes; Level of Difficulty: medium

Preheat oven to 375 degrees F

In a bowl beat the three egg yolks and the sugar; add the flour together with the baking powder and the lemon peel (grated).

In another bowl, beat the egg whites with a pinch of salt until frothy. Stir into flour mixture and then add the 2 cups of crushed walnuts. Mix well. Pour the mixture into the buttered and floured pan, bake in the oven for about 35 minutes at 375 degrees F.

After 35 minutes insert a toothpick in the middle of the cake, if it comes out dry, take the torte out of the oven, let cool and remove from pan onto cooling rack. Cover with cheese cloth or thin dish towel.

For the Cream:

In a bowl mix the softened butter until crumbly, add the sugar and stir with a wooden spoon until the mixture is soft and creamy. Add the yolk and gently pour in the cold coffee and continue stirring. Spread the cake surface with the cream, or serve the cream separately. Decorate the torte with walnut halves.
