 "Vincotto®" is an elixir, sweet and velvety with delicate and harmonious flavours of spices, grapes and plums. The uniqueness of the Vincotto® is based on a traditional secret recipe, strictly guarded by the Calogiuri family, who have lived in Lizzanello (Lecce) for over 500 years.
Vincotto® is made from two varieties of grapes, Negroaroma and Malavasia Nera. The grapes are left to dry on the vine or over wooden frames, then the must is gently  boiled until it reduces to 1/5 its initial volume. The syrup is then poured into small oak barrels along with the old mother Vincotto®, or starter. It is aged for 4 years, allowing it to release all of its aromas and flavors. No additives, preservatives or dyes are used, and no sugar is added.
How to use Vincotto®: A versatile ingredient that really does have a life beyond just dressing salads. Used as a condiment, mere drops may be drizzled over roasted meats, salads, vegetables and even desserts giving them a delicious tang and unique taste. It blends nicely with bacon and with potatoes for an original potato salad. It gives zest to many desserts, to vanilla ice cream, fresh peaches or pears. A splash of Vincotto® added to yoghurt, fruit and chopped almonds makes an appealing dessert.
