“Brillo” means high and merry in the Tuscan dialect.
Pecorino matured in wine in terracotta pitchers.
After at least four months of maturation of the Pecorino cheese and very scrupulous selection the cheese is washed, dried and placed in terracotta pitchers (a typical Tuscan container for wine and oil) containing a mixture of Tuscan wine for another month.
This process needs constant care such as continuous daily control until the cheese does not reach its right intensity of absorption of the wine which considerably modifies its original characteristic.
When the cheese is removed although it has not lost its typical taste of matured Pecorino; it has become softer, sweeter and has acquired a delicate taste and unmistakable fragrance of wine.
