This what Slow Food says about the San Marzano tomato: "Some of Italy's most famous vegetables are at risk of extinction, the authentic San Marzano tomato being just one example. A very delicate variety that is difficult to grow and process, this tomato develops an extraordinary fragrance when ripening, reminiscent of freshly cut grass and spices. The San Marzano tomato is inextricably linked to Neapolitan pizza, and is also an ingredient in traditional Neapolitan ragù, a meat sauce that must simmer for at least five or six hours. This product is produced and packed by Agrigenus that is an agricultural co-operative formed in 2005 to help develop the achievements of single members that over the generations have dedicated themselves to the cultivation of products of high quality that are typical of the region of Campania.
