Sicilian Cannoli Filling - Fills 12 regular, or 24 mini cannoli

Ingredients:
  • ѕ pound ricotta (about 1Ѕ cups), preferably skim milk
  • ј cup powered sugar
How to Prepare:
It is best to make this the day before use. Drain the ricotta by placing it in a strainer set in a bowl. Refrigerate for at least 2-3 hours, preferably overnight.

Place the drained ricotta in a food processor and process until smooth. Transfer the ricotta to a mixing bowl, add the sugar, and whip by hand or with an electric mixer until light and fluffy. Cover and refrigerate until you are ready to use it.
